NIKLAS SCHRÖTER

The kitchen is my home!

For me, cooking is a world in which I can develop; a place where I can fully concentrate on my senses.

This has always been part of my life. Be it cooking with my mother for my five siblings, simply preparing salad in my best friend's restaurant, or the priceless and extremely valuable cooking experiences with my grandmother in Sweden, with her insider tips from her wealth of experience from a long life in gastronomy, as well as all the knowledge she had received from my grandfather, who was a cook on a cruise ship when he was young and later worked in setting up various restaurants. Unfortunately, I didn't get to know him again, but his passion for food preparation didn't go away with him.
I have always had contact with the kitchen - consciously or unconsciously.
 

Finally, I had the opportunity to gain insights into various cuisines. Among other things, I worked in a vegan restaurant that only used Demeter products, or helped out in good middle-class restaurants.
At the age of 21, I decided to train as a chef in a star restaurant. During my training I really got to know “fine dining” cuisine.

During my apprenticeship, my boss let me run a “pop up” restaurant. Here I learned a lot about organization and what it means to be a host.

 

As a chef, it's important to me to create something special with what I have. I not only value enjoyment, but also the presentation and the ambience. For me, cooking is so much more than just preparing food. For me, cooking is passion and joy in life.
